veg Fry and Thai salad


I sliced few vegetables, as shown in this pic. It was done in haste. More colors would be better. More the color more it will be healthier. I diced the cabbage, frenchbeans, carrot, raddish, papaya, capsicum, green chilies (the big ones often used to make the pakodi) and few green peas.




Method of cooking:  Heat the pan, traditionally it is said that it is better to have a pan with heavy bottom. Pour some oil, use mustard oil as it is healthier. Put mustard seeds, fenugreek seeds(methi), jeera(cumin), red chili, green chili, curry leaves fry for few seconds when it starts crackling add one spoon garlic ginger paste, chopped onion or spring onions. When onions turn golden, add green peas, beans first as they will take more time to cook. Gradually add papaya, carrot, raddish and then capsicum in that order. Add salt to taste.  Toss few times. Cover it. Put flame to sim for 2 to 3 minutes. Shift again with the help of a wooden handler. My son likes the magi very much. Thus to bring that taste I put “Maggie” tastemaker in this. One can use any other tastemaker like biryani or pulao masala, chat masala, chole or chana masala.
Nowdays there comes noodle masala also. I found pavbhaji masala also. There are varieties of such masala packets according to regions. There is lemon rice powder, imli rice powder etc etc. more adventurous can use or experiment with adding two spoon full of gram flour or any other unusual things such as corn flour. Cook for some few minutes and the veg fry is ready to serve. Add it to sandwiches or as a fill it to make veg roll with chapati or roti. Add it to pasta, or rice as per your need. 
To enhance taste one can add the Vinegar (read-chilli spiced one) nowdays the chili vinegar also comes in bottle. I used to go to Red Rose of shopping complex near campus school IITK to have the taste of those chilies and onion(red onions) in the vinegar…in the lunch period. Few students used to take sugar also.
THAI SALAD:  I dream of making the Thai salad. Dice green papaya, carrots. Pound garlic, green chilli, pepper, lemon juice, salt together. Add crushed roasted peanuts. Put some more lemon juice. Add diced papaya and carrots to this paste. Taste it and enjoy the peppery salad.
